Memorial's Quintessential Neighborhood Tavern

Bar Bludorn describes itself plainly and accurately: a quintessential neighborhood tavern where Texas-touched dishes and home-grown hospitality merge into a distinctly Houston dining experience. Opened by Chef Aaron Bludorn in the Memorial area, it is the third restaurant in a group that also includes the eponymous Bludorn and the seafood-focused Navy Blue — a track record that earned Wine Spectator's Award of Excellence for 2025, a recognition that speaks to the seriousness of the wine program behind what looks, on the surface, like a relaxed American bar and grill.

The People Behind the Place

Chef Aaron Bludorn's path to Houston ran through the Culinary Institute of America, then through the kitchens of Michelin-starred Chef Douglas Keene and, for many years, Daniel Boulud's Café Boulud in Manhattan — where he earned New York City's Rising Star Community Chef Award from Star Chefs and appeared on Netflix's culinary competition series The Final Table. In 2019 he and his wife, Victoria Pappas Bludorn, relocated to Houston. Victoria, a Houston native who trained at the International Culinary Center and spent five years at Boulud's management company The Dinex Group, handles HR and marketing for the group. Completing the founding partnership is Cherif Mbodji, Director of Operations, who brings experience from Michael Mina and two-Michelin-starred Bouley and Restaurant Daniel.

The kitchen at Bar Bludorn is now led by Executive Chef Clayton, a Katy, Texas native who arrived as an extern in 2021, worked through every station, and stepped into the top role in May 2025. Overseeing the dining room is General Manager David Coker, a Dallas hospitality veteran who was part of the original opening team. The wine program is in the hands of Evan White, whose previous work earned a Wine Spectator "Best of Award of Excellence" at New York's La Tête d'Or — experience that informs the thoughtful, guest-focused list that helped Bar Bludorn secure its own Wine Spectator recognition.

What to Expect

The format is all-evening American dining with a genuine bar at its center. Happy hour runs daily from 4 p.m., and seasonal programming — a summer Spritz menu, a dedicated Martini Happy Hour — signals a bar culture that takes its drinks as seriously as its food. Private dining and event spaces accommodate everything from intimate gatherings to larger parties, and takeout is available for those who want the Bar Bludorn experience at home.

The team's fine-dining backgrounds are present without being heavy-handed: this is a place built for the neighborhood, shaped by people who have cooked and served at some of the country's most decorated tables.
