A Wine Program Built on Real Expertise

The wine list isn't just long — it's curated with genuine depth. Beverage Director Emily Nevin-Giannini holds an Advanced Certification from the Wine & Spirits Education Trust, a Master Certification in Rioja Wines, and a Certified Sherry Wine Specialist credential from the Regulatory Council of Jerez. She travels directly to source bottles from small producers committed to quality methods, with a particular focus on Spain and South America.

Alongside her, VP of Food & Beverage Innovations Gretchen Thomas brings credentials from WSET, CMS, CSW, and NOSA, and is a certified Spanish Wine Educator who scored in the top 15 in the world through the Wine Academy of Spain. Together, they've shaped a program that goes well beyond the bottle — the team runs substantive wine classes exploring iconic Spanish regions including Rioja, Ribera del Duero, Priorat, and Bierzo, walking guests through terroir, winemaking technique, and varietal character with the kind of clarity that makes wine approachable without dumbing it down.
