Chef Derek Piva

The kitchen is led by Executive Chef Derek Piva, whose background reads like a map of serious culinary ambition. Raised on a Brazilian farm, he developed an early and lasting respect for whole-animal butchery and sustainable horticulture. That foundation took him through Michelin-starred kitchens worldwide and a formative stretch in New Zealand, where he deepened his command of farm-to-table cooking and complex flavor profiles.
