From Butcher Shop to Frisco's Premier Steakhouse

The story behind Perry's Steakhouse & Grille begins in Houston in 1979, when Bob Perry opened a modest meat market called Perry's Butcher Shop and Deli. By 1986, his son Chris Perry had persuaded him to add dining tables — a move that proved popular enough to inspire something larger. In 1993, Chris opened Perry's Steakhouse & Grille®, combining the family's deep knowledge of quality beef and pork with a more considered dining experience. The Frisco location on Parkwood Boulevard is part of that same family-owned group, now spanning locations across Texas and beyond, yet still guided by the butcher shop philosophy of top-quality selection and personal service.

Rare & Well Done® — What That Actually Means

Perry's calls its approach "Rare and Well Done®," and the phrase has a specific meaning on the plate. Butchers hand-select the beef before chefs apply a signature spice blend; the result is Prime USDA-aged steaks with the marbling and texture that the restaurant describes as slicing "like butter." Additions like Oscar Style with Blue Lump Crab and Béarnaise, Peppercorn Reduction, or Truffle Merlot demi-glace let guests customize each cut, while show-stopping sides for two round out the table.

The wine program earned a Wine Spectator Award of Excellence, a recognition that reflects the care given to pairings throughout the meal — and to the cocktail side of the menu through Bar 79®, named after the year the Perry family first opened their doors.

The Pork Chop That Defines the Menu

Perry's Famous Pork Chop is the dish that consistently draws attention — and for good reason. Each chop is rubbed with a secret blend of seasonings, cured, then roasted on a rotisserie with pecan wood for up to six hours before being topped with Perry's signature herb-garlic butter and carved tableside. At seven fingers high, it is an unexpected centerpiece for a steakhouse, and one that Eat This, Not That ranked as the best pork chop-and-applesauce pairing in the country, served alongside whipped potatoes and homemade applesauce.

Private Dining and Celebrations

The Frisco steakhouse is well set up for groups and special occasions, with elegant private dining rooms and a flexible events menu. For milestone moments, the team offers rose petals for anniversary celebrations, a dedicated anniversary dinner menu, and complimentary birthday touches. Bar 79® runs a Social Hour with bar bites, cocktails, and wine — a more relaxed entry point into the full Perry's experience.
