The story
Set against wide desert views at the Four Seasons Resort Scottsdale at Troon North, Talavera is the resort's signature restaurant — a premier steakhouse that draws its spirit and flavors from Spanish and Latin traditions. The setting does a lot of the work: open-air and indoor dining allow guests to move with the temperature and the light, while firelight and the slow fade of a desert evening do the rest.
Chef de Cuisine Emmanuel Urban guides the kitchen with a clear sense of purpose. "My passion and love for cooking is based on creating a unique and extraordinary experience for each guest," he has said — and the menu reflects that intent without overreaching. Prime cuts anchor the experience, but the Spanish sensibility runs throughout: the Talavera Paella arrives loaded with chorizo, chicken, pork belly, lobster, prawn, mussels and clams, a dish that earns its place at the center of the table. The Wagyu Ribeye comes with squash variations and chimichurri, bridging the steakhouse tradition with the Latin pantry that defines Talavera's identity. Desserts — cinnamon churros, a citrus chili panna cotta, tiramisu pops — close the meal with the same balance of familiarity and craft.
The bar program leans into the Spanish canon as well, with signature gin and tonic cocktails that have become a calling card of the restaurant.
Wine Spectator recognized Talavera with its Award of Excellence in 2025, a distinction that speaks to the depth and care of the beverage program supporting this Spanish cuisine.
Two private dining rooms give the restaurant a quieter dimension. The Gin Room suits smaller gatherings with an intimate feel, while the Wine Room surrounds guests with an extensive collection — both designed, as the restaurant puts it, "for thoughtful hosting and memorable evenings."
Talavera serves dinner Wednesday through Sunday, with outdoor seating that makes the most of the Arizona sky.
