When Chef Jon Bonnell opened his namesake restaurant on Bryant Irvin Road in 2001, Fort Worth hadn't seen anything quite like it. The premise was straightforward but ambitious: take the ingredients Texas has always had — wild game, Gulf seafood, organic beef, fresh herbs — and treat them with the seriousness they deserve. More than two decades later, Bonnell's Fine Texas Cuisine remains the restaurant most closely identified with the city, and with the idea that Texas cooking belongs in the same conversation as any fine dining tradition in the country.

Jon Bonnell was born and raised in Fort Worth, and his background shows in everything on the menu.
