Beef is hand-selected from the best-fed cattle through premier stockyard packing companies, then aged on the premises to what the kitchen describes as "the mellow point of perfection." Every cut is center-cut only, drawn from USDA Prime stock, and finished by an in-house butcher — a detail that matters when the goal is consistent tenderness and flavor across every service.
