The story
Truluck's on Fort Lauderdale Beach occupies a straightforward position: it is a fine dining seafood restaurant that refuses to compromise on sourcing. The guiding principle, stated plainly on the menu and lived out in the kitchen, is that every ingredient must "make sense for the plate, the palate, and the planet." That commitment has earned the Fort Lauderdale location a Wine Spectator Award of Excellence in 2025 — recognition that reflects not just the cellar but the broader seriousness of the operation.
The signature is Florida stone crab, and Truluck's relationship with it goes well beyond simply putting it on the menu. The restaurant works directly with crabbers harvesting from the Florida Gulf and Atlantic coasts, with claws moving from traps to table in under 24 hours. Across the group, that translates to more than 300,000 fresh claws served each season — not a single one frozen. The season runs October 15 through May 1, and the kitchen treats those dates with genuine respect. Outside stone crab season, the American seafood menu pivots to dishes like miso seabass — a kitchen favorite prized, in the words of Florida Regional Chef Partner Odel Arencibia, for "the complexity of the dish itself and the skill set required to make it perfect" — alongside Ōra King Salmon, responsibly raised and served when available.
Corporate Executive Chef Thomas Dritsas leads culinary direction across the group, working alongside Director of Culinary Operations Chef Samir Canaan, who has been with Truluck's for close to two decades. Their philosophy balances non-negotiable standards on the classics with room for seasonal creativity — "guests get the comfort of their favorites and the thrill of something new," as Canaan puts it. Chef Partner Manny Vera, with 26 years at Truluck's, anchors the broader culinary culture: a conviction that food is, above all, about bringing people together.
The beverage program is as deliberate as the kitchen. Beverage Director Dave Mattern has built a wine list with particular depth in Italian varietals — Vermentino, Verdicchio, Timorasso, Carricante — chosen specifically to pair with seafood. The list's quality is what the Wine Spectator Award of Excellence recognizes. At the bar, the Martini Experience offers four house martinis, available as a full pour or the petite Tiny Tini, alongside an exclusive single-barrel Elijah Craig bourbon hand-selected by Mattern and available in a Single-Barrel Manhattan or Old Fashioned. Happy hour runs nightly, with cocktails, wines by the glass, and freshly shucked oysters all half off in the bar.
The Fort Lauderdale location offers private and group dining spaces suited to rehearsal dinners, corporate events, birthdays, and anniversaries. The event team, led locally by sales and event manager Elizabeth Nourse, handles logistics end to end — the stated goal being that the host should enjoy the evening without lifting a finger.
