The story
Stage Left Steak opened on Memorial Day Weekend 1992, the creation of two Rutgers friends, Francis Schott and Mark Pascal, who shared a passion for food and a genuine belief in New Brunswick's potential. After working in other restaurants and earning their footing, they struck out on their own — and what began as a neighborhood commitment has grown into one of New Jersey's most respected American steakhouse destinations.
From the start, the kitchen has been greenmarket-driven and seasonal, seeking out the best of what's local. The same philosophy extended to the bar and cellar: estate-bottled wines from small producers, craft beer and spirits, and cocktails made from scratch with fresh ingredients. As Schott and Pascal put it, they were among the first restaurants in the state to follow these principles — and they remain just as committed today.
The menu centers on premium dry-aged steaks cooked over a wood-burning grill. For those wanting to splurge, prime Wagyu beef — renowned for its marbling and tenderness — is a signature offering, with a range of cuts available at multiple price points. The eleven-ounce burger has earned its own following, named one of the best in New Jersey by NJ Monthly, Edible Jersey, and others. Served with aged Vermont cheddar, applewood smoked bacon, and thick-cut steak fries, it's a case study in doing something simple with real care.

Schott and Pascal have spent three decades building relationships with small producers and hunting down bottles that genuinely surprise. That expertise now extends to an online wine shop, where the full cellar is available at liquor store prices.
