The story
For more than twenty years, Alchemy has held its place as a landmark on Edgartown's Main Street — a friendly, elegant, and vibrant spot that locals and visitors return to season after season. Chef-Owner Christopher Stam brings a rare combination of credentials to the table: family ties to the founders of Martha's Vineyard on one side, and a celebrated New York City résumé that includes Jean-Georges, Spice Market, and DB Bistro on the other. That tension between island roots and metropolitan polish is precisely what defines the restaurant's character.
Alchemy operates as a genuine American bistro, drawing inspiration from the culinary traditions of Italy, France, and Spain while staying firmly grounded in the ingredients available from Martha's Vineyard's land and sea. The menu evolves with the seasons — Stam's approach is to let locally sourced products lead, then enrich them with the finest ingredients from further afield. The result is a style of American seafood and bistro cooking that feels neither provincial nor pretentious.
The bar program at Alchemy is as seriously considered as the kitchen. Meaghan Robinson directs the wine program, sourcing a diverse collection of bottles — spanning Burgundy Chardonnays, Barolo, Bolgheri Bordeaux blends, and aged Tawny Ports — priced, as the restaurant puts it, "to reward the wine lover." That program has held a Wine Spectator Award of Excellence continuously since 2019, a recognition that reflects genuine depth and curation rather than a token list.
Robinson's hand extends to the cocktail menu as well, where seasonally inspired creations sit alongside classics. Martha's Vineyard Magazine has named Alchemy's cocktails the best on the island every year since 2014 — a streak that speaks for itself.
The space offers two distinct moods: the bright, bustling energy of the main bistro, or a quieter evening by the fire. A late-night menu runs from 10 PM to midnight, making Alchemy one of the few places on the island where the evening doesn't have to end early. Whether the occasion is a relaxed dinner or a private event, the room carries the same warmth that has kept it at the center of Edgartown's dining scene for over two decades.
