The story
Founded in 2022 by John Sarno, Chops Steakhouse has established itself as the standout American steakhouse on Long Island in a remarkably short time. Situated on West Main Street in Patchogue, the restaurant draws its identity from the Prohibition era — red carpet at the door, a doorman, swing-era atmosphere, and a menu built around the kind of serious, unhurried dining that the setting demands. The Wine Spectator Award of Excellence, earned for 2025, reflects the depth of intention behind both the kitchen and the bar program.
Head Chefs Luis Juarez and Edwin Hernandez share the stoves, crafting a menu centered on USDA Prime dry-aged cuts. The steaks — from a 12 oz. Petit Filet to a 40 oz. Tomahawk Ribeye and a Porterhouse for Two — are sourced fresh, never frozen, with guests noting beef received just one to two days after purchase. American Wagyu Ribeye rounds out the premium options, while enhancements like Bone Marrow Butter, Black Truffle Butter, and Oscar Style (crabmeat and béarnaise) allow for genuine customization.
Beyond the steakhouse core, the menu holds its own: Grilled Octopus Salad, Beef Carpaccio, Oysters Rockefeller, a Hot Seafood Platter for two or four, Chilean Sea Bass pan-seared with potato leek purée, and a rotating Catch of the Day. A prix fixe at $65.99 per person runs most evenings, offering an accessible entry point to the full experience.
The cocktail program leans hard into its Prohibition inspiration. Old Fashioned variations range from the house Chops Classic (Great Jones Bourbon, demerara, Angostura bitters) to the showpiece Gold Standard — Blanton's Gold, 24-karat gold leaf Luxardo cherry, served tableside from a cherry wood-smoked safe for $175. Classic Prohibition cocktails like the Bee's Knees, Sazerac, and Boulevardier sit alongside an extensive spirits flight menu featuring Pappy Van Winkle, Clase Azul, and Macallan verticals.
The wine list, recognized by Wine Spectator, spans Burgundy Chardonnays, Napa Cabernets, Rioja Reservas, and Amarone, with a Wednesday promotion offering 50% off bottles over $100 with any steak order.
Guests describe the atmosphere as intimate and theatrical — a time-machine quality that delivers five-star service without stiffness. Complimentary chauffeur service, valet parking, live music on Thursday evenings, and a private room for events round out an offering that works equally well for date nights and larger celebrations. Lunch service runs Thursday through Saturday, noon to 4 PM, with the full dinner menu always available alongside it.
