A Story That Started with a Hamburger

Morton's, The Steakhouse traces its origins to an unlikely moment: co-founders Arnie Morton and Klaus Fritsch, both working at the Playboy Club in Montreal, bonded over what Arnie called the best hamburger he'd ever tasted — the "Million-Dollar Hamburger." That chance encounter in the kitchen set the course for a steakhouse that first opened on State Street in Chicago in 1978 and has since grown to more than 65 locations worldwide. The Rosemont location, at 9525 W. Bryn Mawr Ave., carries that same founding conviction: quality, consistency, and genuine hospitality.

The Steakhouse Standard

At its core, Morton's is a steakhouse built around USDA prime-aged beef — the top 2% of beef available in the United States. The same suppliers have been used since day one, and any cut that doesn't meet Morton's standards simply doesn't make it to the table. Alongside the prime beef, the menu extends to fresh seafood: Chilean Sea Bass, Oysters on the Half Shell, Colossal Shrimp, and Red King Crab Legs. Seasonal additions — including a Prime Bavette Steak Frites, Wagyu Beef Stroganoff, Oysters Rockefeller, and a Lobster & Crab Cocktail — keep the menu from standing still.

The dining room suits business dinners and special occasions equally well, while the Bar 12-21 program offers hand-crafted cocktails, chef-selected bar bites, and a more relaxed pace for those who want it.

Wine at the Center

The wine program is a serious part of the Morton's identity. Each location maintains a list of more than 300 wines, and the Rosemont restaurant holds the Wine Spectator Award of Excellence — recognition that reflects a list spanning rare cult classics, sommelier selections, and carefully chosen by-the-glass options. An on-site Wine Locker program allows guests to store personal bottles, and a dedicated Sommelier Team is on hand to guide pairings. Morton's has also introduced a private label, "State & Rush," honoring its Chicago roots with a Cabernet Sauvignon, Chardonnay, and Pinot Noir sourced from Oak Ridge Winery in Lodi, California.
