A Neighborhood Table with Serious Ambitions

Opened in 2001 as a tiny 40-seat room on the corner of 7th and Sherman in Denver's Capitol Hill, Mizuna has grown into one of the most consistently celebrated restaurants in the American West. Frank Bonanno, the chef and founder behind Bonanno Concepts, set the bar plainly at the start: "If we make just 50 people happy a night, we're doing great work." More than two decades on, thousands of diners have crossed that threshold — among them Robert Plant, Michelle Obama, and Anthony Bourdain, who visited during the filming of No Reservations and stayed to drink with the team long after the cameras stopped rolling.

French Technique at the Heart of It

Mizuna describes itself as "a neighborhood American eatery firmly rooted in French cooking techniques," and the menu bears that out in precise, unfussy detail. Dishes change every month to follow the seasons on land and by sea, so the kitchen stays honest about what's actually good right now. On any given evening, that might mean a Périgord Truffle Risotto with Meyer lemon and whipped mascarpone, a Centennial Farms Beef Wellington with blonde morels and sauce verjus, or the restaurant's long-famous Lobster Macaroni & Cheese — butter-poached Maine lobster folded into mascarpone. The French culinary foundation shows in the craft: house stocks started at dawn, hand-spun ice creams, produce sourced from local vendors like The Truffle, Verde Growing, and Mountain Produce.

The Kitchen as Incubator

Though Mizuna is open for dinner only, the day begins early. Chefs collaborate on the monthly menu, each dish a deliberate expression of a single cook's palate — "simple yet intense flavors and aromas," as the restaurant puts it. That culture of mentorship runs deep: since 2001, more than 25 Mizuna alumni have gone on to open restaurants of their own, making the kitchen one of the most fertile training grounds for chefs in the western United States.

The wine program earned Mizuna a Wine Spectator Award of Excellence in 2023, recognition that reflects the same care applied to the food — thoughtful selection, not spectacle.

Intimate by Design

The room holds its coziness deliberately. Private dining is available for groups who want the Mizuna experience on their own terms, including a wine room that accommodates a full chef's tasting menu with sommelier-led pairings. The service is described as "tight and professional," and the 22% hospitality fee — distributed equitably across the entire team, front and back of house — reflects a genuine commitment to the people who make each evening work.
