Barolo Grill has built its reputation on a straightforward but demanding premise: serve authentic northern Italian food in a comfortable, elegant setting, and never stop learning. Owner and wine director Ryan Fletter has been part of Barolo Grill for over 30 years — first as a staff member, then as the owner since 2015. Executive chef Darrel Truett leads the kitchen, while sommelier Erin Lindstone and general manager Liz Batkin round out a team that is as knowledgeable as it is attentive. In 2023, the Michelin Guide recognized the restaurant with both a recommendation and the Michelin Guide Colorado Sommelier Award, adding to a record of consistent critical recognition that speaks for itself.
What sets Barolo Grill apart from most Italian restaurants is a tradition that began in 1995: every year, the entire staff travels to Italy for ten days, typically in early July. The itinerary changes annually and has taken the team through Piedmont, Tuscany, Umbria, the Veneto, Alto Adige, and even across the border into Burgundy and Provence. When the team visits Felsina in Chianti Classico or tastes with producers of Barolo and Barbaresco in Alba, that firsthand knowledge comes back to Denver and shows up on the plate and in the glass.
The result is a wine list featuring small family wineries committed to earth-friendly farming, recommended by staff who have walked the vineyards themselves. Regular wine dinners — pairing four-course meals with producers visiting in person — extend that connection directly to guests.
