The story
The Pappas family has been in the restaurant business since 1967, and that depth of experience shows in everything Pappas Bros. Steakhouse does. The original location opened in Houston in 1995 on the site of The Strawberry Patch, the family's first restaurant, founded by Harris, Chris, and Greg Pappas. Over more than three decades, Pappas Bros. has grown into what it calls—without overstatement—the classic Texas steakhouse, earning devoted guests from across the country and a reputation that precedes it in every serious dining conversation.
The foundation of the menu is USDA prime beef, sourced from a single packer in the Midwest and transported directly to the restaurant. From there, the process is entirely in-house: butchering on-site, dry aging in humidity-controlled conditions for a minimum of 28 days, then seasoning simply with kosher salt and black pepper, finishing with butter, and searing to lock in flavor. It is an approach the restaurant describes as "as fastidious as it is timeless"—tight quality control from field to flame, with no shortcuts along the way. Every other item on the menu, from starters to desserts, is made from scratch in-house daily.
Wine is the second pillar of the Pappas Bros. identity, and it is treated with the same rigor as the beef. The cellar holds thousands of distinct selections from every major fine-wine-producing region in the world, and the list is reviewed and updated monthly. The sommelier team—all certified, most holding Advanced Certificates—has cultivated direct relationships with producers large and small, giving guests access to hard-to-find bottles at a range of price points. That dedication earned Pappas Bros. the Wine Spectator Grand Award, one of the most prestigious recognitions in the wine world, and the program continues to hold that honor. Steven McDonald, a Master Sommelier on the team, was named the inaugural Texas MICHELIN Guide Sommelier Award winner in 2024, a distinction that speaks to the caliber of expertise guiding every table.
The wine program extends into a calendar of tastings and seated dinners that bring guests face to face with winemakers from around the world. These events—intimate by design—allow collectors and curious newcomers alike to explore verticals, compare terroirs, and sit with the people who made the wines.
