Le Bilboquet Dallas traces its lineage to an original location that first opened in 1986, and the Dallas chapter carries that heritage forward under owner Stephan Courseau and Executive Chef Momo Sow. Situated in the Travis Walk center in the Knox area, the restaurant has become a steady presence in what Travis Street Hospitality — the Dallas-based group behind several of the city's most talked-about addresses — describes as a new era of French dining in the city.

The hospitality group was founded by Stephan Courseau and Daniele Garcia, and has grown alongside partners Edward Goemans and Chef Bruno Davaillon. Le Bilboquet remains the flagship expression of their philosophy: French cuisine delivered with a New York sensibility and a genuine sense of place.

French Cuisine, Locally Grounded

The kitchen's approach is straightforward and deliberate. French staples share the menu with French-American fusion, all built on locally sourced and organic ingredients where possible, free-range poultry, and grass-fed Texas beef. Dishes spotted from the restaurant's own social feed — a Mushroom Risotto, a Crab & Avocado Salad — suggest a kitchen comfortable moving between classic French technique and lighter, produce-forward plates.

The wine list mirrors the same dual identity, drawing from both French and American producers with pairing in mind. That commitment to the cellar earned Le Bilboquet a Wine Spectator Award of Excellence in 2024, a recognition that reflects the care taken in building a list that complements the chef's cooking rather than simply accompanying it.

One of the restaurant's defining physical features is its garden room, which the team describes as offering guests a sense of traveling to Europe — without leaving Dallas.
