Haywire sits at 1920 McKinney Ave in Uptown Dallas, occupying a space where ranch-country values and urban polish coexist without apology. The concept is straightforward: a Texas steakhouse that draws everything it can from the Lone Star state itself — farmers, ranchers, growers, distillers, and artisans — and puts it on the plate with enough refinement to satisfy any table, from a working lunch to a celebratory dinner.
The kitchen operates on a genuine farm-to-fork philosophy. As Haywire puts it, the menu is "hearty enough for the ranch hand, yet refined enough for the businessman or woman." That balance is the whole point. Locally sourced ingredients shape every section of the menu, from starters and greens through to the cuts from the ranch and the Texas Plates that anchor dinner service. Even the fries are fried in beef tallow — a deliberate, old-school choice that signals exactly where Haywire's priorities lie.
The bar and wine list earned Haywire a Wine Spectator Best of Award of Excellence — recognition that reflects a genuinely curated cellar rather than a perfunctory list. For a steakhouse, the wine program is a serious draw, with thoughtful pairings available across both lunch and dinner menus.
