The Classic Italian Mecca Made for Dallas

Carbone arrived in the Dallas Design District in 2022, bringing with it the full weight of one of America's most celebrated Italian restaurant brands. Founded by Chef Mario Carbone, Jeff Zalaznick, and Chef Rich Torrisi under the Major Food Group banner, the Dallas outpost transplants the glamour and warmth that made the original a New York institution — then layers it with what the restaurant itself calls "Dallas' steely confidence."

Chef Mario Carbone and His Roots

Growing up in Queens, New York, Mario Carbone was shaped by two distinct Italian traditions: the northern elegance of his maternal grandparents and the Sicilian abbondanza of his father's side. After graduating from the Culinary Institute of America, he spent a year in Italy deepening his connection to those roots. That immersion informs everything on the plate today. His Italian cooking remains anchored in the classics of his childhood — top-quality ingredients, time-honored technique, and an unapologetic reverence for a bygone era.

The Menu and the Experience

The menu reads like a love letter to Italian-American tradition: Caesar Salad alla ZZ, Carpaccio Piemontese, Baked Clams, Veal Parmesan, and Ribeye Diana sit alongside seasonal specials created by Chef Carbone as a nod to his adopted city. The meal is designed for sharing from the first moment, when the table receives fresh chunks of parmigiano, an overflowing bread basket, and a selection of cured meats — all the way through to the captain's inquiry about the famous carrot cake.

Service here operates under the philosophy of "A Piacere" — giving each guest exactly what they want that evening, starting with how they'd like their martini fixed. The service captains, dressed in their signature burgundy tuxedos, deliver a warmly hospitable and occasionally theatrical experience that makes clear fine dining can be genuinely fun.

The wine program has earned recognition to match: Carbone Dallas received the Wine Spectator Best of Award of Excellence in 2023, a distinction that reflects the seriousness and depth of the cellar alongside the Italian food it complements.

The Room

The interior was conceived by renowned designer Ken Fulk, who merged Venetian opulence with midcentury swagger. The result is a space with the grandeur of a palazzo — unapologetically luxurious, intimate in feel, and entirely suited to a city known for grand gestures.
