The story
Adelmo Banchetti was sixteen years old when he began his career in food and beverage in Florence, Italy. The decades that followed took him across the world — through ships and hotels — before Dallas became his permanent home. There he worked at some of the city's most storied establishments: the Fairmont Hotel's Pyramid Room, the Mansion on Turtle Creek, and the Crescent Court Hotel. In 1989, he and his wife Eliza, who brings her own Mediterranean heritage to the table, opened Adelmo's Ristorante to immediate acclaim.
The cooking at Adelmo's draws on the Italian and Mediterranean regions, with particular attention to the herbs, spices, and grains indigenous to those shores — all prepared with the freshest ingredients. It is Italian cuisine interpreted through a genuinely personal lens, shaped by two people whose lives have spanned continents and cultures.
What distinguishes Adelmo's is the atmosphere: the restaurant describes itself as a rare old-world setting, and the warmth of a family-run house runs through every detail. Wine has always been central to the experience, and Wine Spectator recognized that commitment with its Award of Excellence — a reflection of the carefully curated selections that complement the kitchen's work.
Today, the Banchetti family tradition continues with daughter Lauren now part of the team. Adelmo's remains family owned and operated, offering the kind of personalized service that is increasingly difficult to find — and that keeps guests returning to this Dallas landmark decade after decade.
