The story
Trelio Food & Wine has been a fixture of the Fresno-area dining scene for nearly 30 years, spending the last two decades under the ownership of Chef and Sommelier Chris Shackelford and his family. Set in Old Town Clovis, this New American restaurant has earned its reputation through a clear and consistent idea: take the best of what local farmers, butchers, dairies, and foragers offer each day, and shape it into something genuinely considered.
That philosophy lands on the table as a five-course prix fixe menu — a format that changes daily depending on ingredient availability. Chef de Cuisine Ross Verzosa has led the kitchen since 2023, and the menu reflects his team's ability to draw on global techniques while staying rooted in the produce and proteins of California's Central Valley. Gluten-free, dairy-free, vegetarian, and vegan needs are accommodated with care.
The wine list is where Trelio has drawn national attention. Wine Spectator recognized it with a Best of Award of Excellence — a distinction that reflects both the depth and the curation behind the 500-plus selections on offer. The list spans sweet and sparkling to structured and dry, assembled by Beverage Director Gary Darakjian alongside Chris Shackelford. Notably, the entire dining room team holds sommelier certifications through either the Court of Master Sommeliers or the Wine and Spirits Educational Trust, so the guidance guests receive at the table is well-grounded.
For those who want to go further, the Trelio Wine Club offers large tastings, wine classes, special dinners, and access to rare bottles — along with dining discounts and the chance to share a table with some of California's leading sommeliers, chefs, and winemakers.
The space is intimate by design. The main dining room — kept at a constant 68 degrees year-round to protect the wine stored within it — seats tables of two to ten, with a four-seat wine bar for solo diners or those passing through. A Library Dining Room, with low-echo acoustics and an 86-inch OLED screen, serves as a private dining space for up to 20 guests. When weather allows, a five-table breezeway area offers an outdoor, alleyway atmosphere for parties of up to eight.
The Californian fine dining experience here is unhurried and specific — a restaurant that knows exactly what it is, and has been doing it well for a long time.
