Fulton Market has long been synonymous with the American meat trade, and Swift & Sons leans into that history with full conviction. The restaurant takes its name from 19th-century cattle industry pioneer Gustavus Franklin Swift, and its design reimagines what that titan's headquarters might look like in a retro-future world. The result, crafted by internationally acclaimed designers Avroko, is a space of high ceilings, stained glass lighting, mosaic marble floors, and raw concrete columns that reveal the bones of what was once a Cold Storage facility at the heart of Chicago's meatpacking district. It's a room that feels both storied and alive.
Executive Chef Chris Pandel brings Midwestern warmth and classical French technique to the Swift & Sons kitchen. Before arriving here in October 2015, Pandel built his reputation at The Bristol in Bucktown and Balena in Lincoln Park—the latter earning a James Beard "Best New Restaurant" nomination and a spot on Bon Appétit's list of 25 best new restaurants in 2012. At Swift & Sons, his approach centers on high-quality, locally sourced ingredients, a "boutique beef" program, handmade pastas, fresh seafood, and thoughtful vegetarian options alongside the steakhouse classics. The team also includes Culinary Director Mike Vilarosa, Chef de Cuisine Mike Gorman, and Wine Director Jillian Nudd—whose cellar earned Swift & Sons the Wine Spectator Best of Award of Excellence, a recognition that speaks directly to the depth and curation of the wine program.
What sets Swift & Sons apart from a conventional steakhouse is the layering of experiences around the main event. The tableside bar cart brings Old Fashioned cocktails—prepared with fine spirits, garnishes, and smoking varietals—directly to your table on Tuesday through Saturday evenings. A sundae trolley closes the meal with decadent, customizable finishes. The bar program runs its own Continental Classics menu, featuring caviar macarons, Lobster Éclairs, Salmon Tartare Cornets, and Steak Frites—small plates that nod to the glamour of grand European cafés.
Daily Whiskey Hour (4:30–6pm) offers $10 whiskey classics including Boulevardiers, Old Fashioneds, and rotating global whiskey flights, paired with oysters, pierogi, or rock shrimp.
