At the helm is Chef Joe Flamm, whose passion for Rome shapes every detail of the experience. The namesake dish, Carciofo alla Giudia — the classic Roman fried artichoke — signals exactly what il Carciofo stands for: rooted, honest, and quietly extraordinary Italian cooking.
