Gibsons Bar & Steakhouse has anchored the corner of Rush Street since 1989, when it became the founding restaurant of what would grow into the Gibsons Restaurant Group. The Beef, the Bar, the Room

This is a classic American steakhouse in the fullest sense. The centerpiece of the menu is Gibsons Prime Angus Beef, sourced and aged to the restaurant's own specifications, alongside a Grassfed Australian line — GGA Ribeye, GGA New York Strip, and a GGA Bone-In Filet Mignon — for guests who prefer a leaner, grass-finished profile. The Prime Steaks section reads like a primer on the great American cuts: a 22 oz W.R.'s Chicago Cut, a 48 oz Big Porterhouse, a 32 oz Tomahawk, and filets ranging from 7 to 14 oz. Prime Rib, available after 3 pm, comes with horseradish cream sauce.
