The story
The name is a clue. coun·ter-: adjective — contrary to intuition or to common-sense but often nevertheless true. That definition shapes everything about this Charlotte fine-dining experience. Owned and operated as a collective effort among its employees, counter- is built around a shared mission to change the restaurant industry from the inside — on wages, on soil health, on who gets a seat at the table, literally and figuratively.
Eighteen seats. A U-shaped counter facing an open kitchen. Concrete floors and white linen concrete countertops deliberately left bare, like a blank canvas waiting to be painted. Every three months, Executive Chef and Founder Sam Hart and his team transform the entire space — tableware, art, music, and all — around a new sensory storyline. Previous themes have included Terroir, which showcased the bounty of North Carolina's seasonal American produce; Curry, which explored the vast cuisines of India and Southeast Asia; Colour, which generated awareness around mental illness; and The Wall, a tribute to the Pink Floyd album. No two themes are the same, and no dish is ever repeated once a theme closes. At the end of each quarter, all revolving items are sustainably recycled, sold, or donated to local nonprofits.
Each course is timed to the minute against a pre-set playlist, making the meal feel closer to a theatrical performance than a conventional dinner service. Seatings run Wednesday through Saturday, reservations are required, and seating is limited by design.
Sam Hart, a two-time James Beard Award finalist, conceived counter- as an incubator for rising chefs in his hometown — a place for empowerment, guidance, and inspiration. Executive Pastry Chef Faith Morley earned the 2023 Pastry Chef of the Year recognition from Unpretentious Palate for her root vegetable tart, described as showing "a dedication to craft in flavor, storytelling, and sheer work hours." Hart himself was named the publication's 2023 Chef of the Year for his advocacy work across the industry.
Beverage Director Michael Myers leads a program that Wine Spectator honored with its Best of Award of Excellence in 2023 — a distinction requiring excellent breadth across multiple wine-growing regions, significant vertical depth, and typically 350 or more selections. The list deliberately features female, LGBTQ+, and minority winemakers. For guests who prefer to skip alcohol entirely, a thoughtfully curated spirit-free pairing is available for every theme.
Counter- partners with three local 501(c)(3) organizations — The Bulb, The Relatives, and Time Out Youth — extending its commitment to community well beyond the plate. It is, in the restaurant's own framing, counter-culture: opposed to industry norms, promoting diversity, and surfacing narratives that have gone untold. For anyone serious about seasonal American cuisine and the craft of storytelling through food, it is exactly what its name promises — contrary to expectation, and nevertheless true.
