A Steakhouse Built on Integrity

Bin 54 Steak & Cellar operates from a clear philosophy: source the highest quality product, lean on local ingredients whenever possible, and let the integrity of those ingredients speak for itself. As the restaurant puts it, dishes are prepared "in a simple and honest manner" — a commitment that runs from the kitchen to the cellar and shapes every plate that leaves it.

All steaks are subtly seasoned and grilled over hickory wood, then rested for a quarter of the actual cooking time before reaching the table. Each cut arrives with one of the house-made condiments on the side — a choice that ranges from a classic Béarnaise or Red Wine Demi Glacé to Ponzu-Wasabi or Dried Cherry — a small but deliberate detail that reflects the care behind the process. The menu spans a serious range of American cuts: a 6oz or 10oz Filet Mignon, a 14oz Prime NY Strip, a 22oz Bone-In Ribeye, and a 32oz Prime Porterhouse for the table.

The Team

Chef de Cuisine Steven Fleckenstein leads the kitchen, with Pastry Chef Ashley Null rounding out the savory with an array of classic desserts — think Banana Pudding with bourbon pecan crumble and torched meringue, or a Chocolate Flourless Cake with sea salt and ganache. Sommelier Franchesca Thepenier oversees what the restaurant describes as an "expansive and unique revolving wine program that parallels the food we serve" — a program serious enough to earn Bin 54 the Wine Spectator Best of Award of Excellence in 2024.

Beyond the Steak

The menu extends well beyond beef. Starters include Seared Diver Scallops with parsnip purée and toasted hazelnut, Lobster Gnocchi in truffle brown butter, and a Beef Tenderloin Tartare with quail egg and potato crisp. Sea options feature Faroe Islands Salmon and an Ahi Tuna with Szechuan pepper crust. The kitchen also sources local and artisan cheeses for both the opening and closing cheese boards.

The Space

Private dining is available in the Aberdeen Room, the Solarium, and — most distinctively — in the functioning wine cellar itself, which the restaurant calls its most intimate private dining experience. The overall atmosphere is designed with intention: from the moment guests arrive to the moment they leave, Bin 54 aims to offer an escape into what it simply calls "a luxurious haven." For fine American dining in Chapel Hill, few rooms carry that promise as convincingly.
