Carvers Steaks & Chops has built its reputation on a straightforward promise: the tradition and quality of a big-city steakhouse at prices that don't require a special occasion to justify. This locally owned, family-run restaurant in Centerville sources its meats, vegetables, and beverages directly from Miami Valley farmers, growers, and distributors — a commitment that shows up on the plate.

The steaks are hand-cut daily and broiled at 1,800 degrees to seal in flavor and natural juices. The New York Strip comes in an 11 oz standard or a 14 oz Carvers cut; the Filet Mignon runs from 8 oz to a generous 11 oz; and the well-marbled 14 oz Rib-Eye rounds out a lineup that also includes New Zealand Lamb Chops, a 20 oz Angus Beef Porterhouse, and a Maple Cider Pork Chop. The wine program earned a Wine Spectator Award of Excellence, and the list draws guests who describe it as extensive — a fitting match for serious American cuisine.

The Prime Rib Is Its Own Occasion

The dish guests mention most is the Prime Rib — available Thursday through Sunday only. The finest Midwestern beef is herb-crusted and slow-roasted overnight, then served au jus in three cuts: a 10 oz standard, a 14 oz house cut, and a bone-in 20 oz Carvers cut. It has limited availability each evening, which only adds to its appeal. One guest called it "the best prime rib I have had in the area," noting the dark, romantic atmosphere and live jazz drifting in from the bar.

Beyond the steaks, the kitchen turns out seafood — Cold Water Lobster Tail, Maryland Lump Crab Cakes, Atlantic Salmon with dill and horseradish — alongside innovative appetizers like Seared Ahi Tuna, Smoked Norwegian Salmon, and Grilled Denmark Brie. Every entrée arrives as a complete meal: soup or salad, a choice of side (roasted garlic mashed potatoes, au gratin, sherried mushrooms, and others), and Carvers' exclusive bread loaf baked fresh daily. House-made desserts — Crème Brûlée, Turtle Cheesecake, Carvers Deep Chocolate Cake — close things out properly.

The dining room offers booths, tables, outdoor seating, and private spaces including the Board Room and East Room for groups and special occasions. Live music plays Thursday through Sunday in the lounge. Guests consistently describe the atmosphere as warm and unhurried — "nothing stuffy or pretentious," as one regular put it — and the service as among the best in the Dayton area.
