The story
Perry's Steakhouse & Grille carries a story that begins in 1979, when Bob Perry opened a modest meat market in Houston called Perry's Butcher Shop and Deli. By 1986, his son Chris Perry had persuaded him to add dining tables — a move that proved popular enough to inspire something larger. In 1993, Chris opened Perry's Steakhouse & Grille, combining careful sourcing with a polished dining experience. The Park Meadows location in Lone Tree, which opened in September 2014, was the brand's first step into Colorado and only its second address outside Texas at the time.
The 11,000-square-foot restaurant accommodates over 400 guests and was designed with Perry's signature philosophy: let the individual location set the tone. An open-concept kitchen, a towering wine wall, an island bar and four private dining rooms give the space a range that suits everything from a business dinner to a milestone celebration. Prominent windows from the bar offer sprawling views that distinguish it from a conventional steakhouse setting.
This steakhouse keeps its butcher shop roots visible. Butchers hand-select Prime USDA-aged beef, which the kitchen seasons with a signature spice blend before cooking. Steaks can be finished with additions including Oscar Style with Blue Lump Crab and Béarnaise, Peppercorn Reduction, Truffle Merlot demi-glace, or a coffee crust — details that push the format well beyond the standard.
The most talked-about item is Perry's Famous Pork Chop: a seven-finger-high cut that is rubbed with a secret blend of seasonings, cured, then roasted on a pecan wood rotisserie for up to six hours before being finished with Perry's signature herb-garlic butter and carved tableside. The ritual of that tableside carving is part of what sets the experience apart. The wine program earned a Wine Spectator Award of Excellence, reflecting a cellar curated to match the kitchen's ambitions.
The four private dining rooms make Perry's Park Meadows a practical choice for group events, corporate dinners and private parties. Bar 79® — named for the year the Perry family first opened their doors — offers its own menu of bar bites and cocktails during Social Hour. The kitchen also accommodates special occasions with touches like rose petals for anniversary dinners and a dedicated anniversary celebration menu.
