The story

Crafted with passion, served with love

A Different Restaurant by Day and Night

Herons occupies an intimate 98-seat dining room inside The Umstead Hotel and Spa in Cary, North Carolina, where floor-to-ceiling windows frame the wooded grounds and original artwork lines the walls. By morning and midday, the mood is relaxed — refined, casual fare served for breakfast, brunch, and lunch, with walk-ins welcome when space allows. When evening arrives, the room shifts register entirely.

One of 83 Forbes Five-Star Restaurants in the World

Dinner at Herons places it in rare company: Forbes Travel Guide has awarded it Five Stars, and it carries a Michelin Recommendation — recognition that has also drawn attention from Food & Wine, Condé Nast Traveler, and Garden and Gun. The AAA Five Diamond distinction rounds out a set of accolades that few restaurants anywhere can claim, let alone in North Carolina.

The draw at dinner is the tasting menu, described by the kitchen as "the truest reflection of our culinary philosophy," built around ingredients sourced from One Oak Farm. Guests who prefer to compose their own meal can choose from an à la carte menu instead. For those who want the full arc of the experience, the chef's signature eight-course kaiseki dinner presents each course in an intricate, artful form with a distinctly regional American sensibility.

The Room Itself

The open kitchen — fully visible yet soundproofed — has a way of holding guests' attention between courses, as the culinary team works in clear view. The atmosphere avoids the stiffness that can accompany this level of fine dining: a pleasant murmur of conversation carries through the room, and on Friday and Saturday evenings, live jazz adds warmth without intruding.

The wine program is serious without being intimidating — more than 1,600 labels on the list, alongside craft beer and signature cocktails. Wine Director Simon Kaufmann also leads regular tasting events and masterclasses, from Spanish Atlantic whites to rare indigenous Italian varieties, for guests who want to go deeper.

Brunch Worth Noting

The weekend brunch service, running Saturday and Sunday from 7:00 am to 1:00 pm, carries the same careful attention as the rest of the menu. It's a quieter way to experience the room and the kitchen's approach, without the formality of an evening reservation.
