The Steakhouse Side

The steak program is built on black Angus beef, hand-cut to the restaurant's own specifications, wet-aged for 21 to 28 days, seasoned with a signature house rub, and finished in a 1,700-degree broiler. That extreme heat is the point — it produces a seared crust and a buttery interior that a conventional oven simply cannot replicate. The menu runs from an 8-oz sirloin to a 20-oz bone-in cowboy ribeye, with sauce options including brandy peppercorn, béarnaise, and black truffle butter. Surf-and-turf additions — cold-water lobster tail, Alaskan king crab legs, Hudson Valley foie gras, jumbo sea scallops — allow the table to go as far as the appetite allows.

The seafood side of the menu carries equal weight, anchored by a trademarked promise: Trust Our Fish™. The restaurant sources its fish from a family-owned fish house in Tampa, Florida, emphasizing freshness and sustainable harvesting. Executive Chef George Castro translates that supply into dishes like black grouper over charred scallion jasmine sticky rice with lobster broth, sea scallops with cacio e pepe risotto and caviar beurre blanc, and a lobster bucatini of butter-poached cold-water tails in vodka sauce with burrata and crisp prosciutto. The Grand Seafood Tower — Atlantic lump blue crab, Alaskan king crab, Maine lobster, shrimp, and oysters — serves as the table's opening statement when the occasion calls for it.

The by-the-glass selection spans Taittinger Champagne, a Sancerre from the Loire, Hartford Court Chardonnay from Russian River Valley, and Caymus Cabernet from Napa — many of the finer pours made possible by a Coravin system that allows single glasses from otherwise-sealed bottles.
