Sweeping views of the Intracoastal Waterway and the ocean beyond set the scene, while a clean cream palette, wicker-accented furnishings, dark woods, and considered pops of blue bring a nautical sensibility to the airy dining room without tipping into theme-park territory.
Executive Chef Peter Annewanter brings more than 25 years of fine dining and Michelin Star restaurant experience to Flybridge. His career spans chef de cuisine at the Five-Star Hotel Bergergut in Austria, executive chef at Hotel Aviva, a tenure at the Relais & Châteaux property Elounda Mare Hotel in Greece, and most recently executive chef at Vortuna Health Resort in Bad Leonfelden, Austria. That international foundation is evident in how he masterfully combines cooking techniques and global ingredients into cuisine that feels both precise and grounded.
The room is deliberately intimate, and a glass-enclosed kitchen means the brigade is never more than a few feet away. Guests regularly interact with the chefs as tableside finishing touches are applied — a detail that Forbes evaluators specifically called out in awarding the restaurant its Five-Star distinction. The result is something closer to a private cooking experience than a conventional dinner service.
Flybridge offers a seasonal five-course tasting menu built around seafood and vegetable-forward coastal cuisine, with a parallel vegetarian-friendly version available — and guests may move between the two throughout the meal. Starters have included bluefin tuna tartare and heirloom tomato consommé; main courses have featured daily fresh catch with summer squash roulade and Kalamata olive brioche. Desserts lean into South Florida's tropical pantry: a dark chocolate sphere filled with passion-fruit cremeux, or a cloud-like interpretation of Key lime pie. A three-course option is also available for those who prefer a shorter format.
The restaurant is exclusive to Yacht Club guests and Club members, reservations are required, and resort-elegant attire is expected — a fitting frame for one of Boca Raton's most decorated dining rooms.
