The story
FireLake Grill House & Cocktail Bar sits inside the Radisson Blu at Mall of America in Bloomington, Minnesota, and operates as something genuinely distinct from its surroundings: a farm-to-table American restaurant with deep roots in the local food culture of the Upper Midwest. The kitchen draws from a wide network of Twin Cities-based farmers, ranchers, and artisan producers — names like Red Table Meat Co., Stickney Hill Dairy, Eichten Farms, Wild Acres Farm Fresh Poultry, and Pepin Heights Apple Orchards, among many others — to put seasonal, regional flavor at the center of every plate.
The menu reflects the character of the region without apology. Starters include FireLake Walleye Cakes with lemon-tarragon remoulade, beer-battered Eichten's Cheese Curds, and Bison Empanadas with charred tomatillo salsa. Mains lean into Midwestern staples elevated with care: Parmesan Corn-Crusted Walleye over wild rice hash, Wild Acres Rotisserie Chicken with garlic-herbed mashed potatoes and roasted Nordic roots, and a 16 oz Ribeye finished with smoked cowboy butter and lava salt. For something more adventurous, the Boar Chops and Elk Smashburger on a pretzel bun speak to the kitchen's appetite for regional game.
Sides carry the same identity — wild rice hash, Minnesota street corn, roasted Nordic roots, and a Nordic Breadbasket of lefse, brioche, and rye with smoked honey and feta spread.
The cocktail bar is a serious operation in its own right, with an extensive bourbon and whiskey collection and handcrafted drinks that occasionally feature honey sourced from bees FireLake sponsors at the Minnesota Landscape Arboretum. The wine program has earned the 2025 Wine Spectator Award of Excellence — recognition that reflects the breadth and quality of the list and cements FireLake's standing as one of the more complete dining destinations in the area.
FireLake is open daily from 6:30 a.m. to midnight, covering breakfast through late-night lounge service every day of the year — including Thanksgiving, Christmas, and New Year's. The space accommodates everything from a quiet breakfast meeting to a private event for up to 100 guests, with dedicated private dining rooms suited to corporate gatherings, rehearsal dinners, and celebrations of all kinds. The atmosphere is warm and social: bar seating, a pool table, a full dining room, and genuine Midwestern hospitality throughout.
For visitors arriving from out of town or locals looking for a reliable spot that takes its American cuisine seriously, FireLake delivers a grounded, satisfying experience built on real relationships with the land and the people who work it.
