Hell or High Water grew directly out of Foothills Local Meats, a butcher-driven operation with deep roots in Black Mountain, North Carolina. The restaurant is the natural next step for a team already obsessed with sourcing: rather than simply selling quality cuts across a counter, they set a table and cooked them. That origin shapes everything on the plate.

The menu is built around seasonal ingredients drawn from the in-house butcher shop and neighboring community farms — a genuinely farm-to-table approach backed by the infrastructure to mean it. Small plates sit alongside shareable dishes, all of them grounded in the same commitment to high-quality, locally sourced American food. The drink list rotates with the seasons too, pairing cocktails, wine, and beer with whatever the kitchen is running — a wine program strong enough to earn a Wine Spectator Award of Excellence in 2025.
