Chef Nick and the Spirit of the Place

At the center of Wild Caddis is Chef Nick, a Montana native whose background in farming shapes the way he approaches the menu. His cooking draws on local ingredients and a distinctly European sensibility — French technique applied to the produce and flavors of the Northern Rockies.
