The story

A Restaurant Born of an Oyster Farm

True Chesapeake Oyster Co. is exactly what its name promises: a Baltimore restaurant with its roots literally in the water. Since 2010, the team has been farming premium oysters in the brackish waters of St. Jerome Creek in Southern Maryland, and the restaurant in Hampden's historic Whitehall Mill is the natural extension of that work. It is Maryland's first oyster farm to open its own restaurant — a distinction that shapes everything on the plate.

The Founding Trio

The operation was built on a friendship between three industry professionals with complementary obsessions. Chef Zack Mills, a Davidsonville, Maryland native, trained at The French Culinary Institute and went on to work under James Beard Award-winning chef Michael Mina, overseeing East Coast culinary operations for the Mina Group and leading the kitchen at Wit & Wisdom in Four Seasons Hotel Baltimore. Nick Shauman, a Charm City native who grew up eating steamed crabs and raw oysters at Lexington Market, created Baltimore's first traveling oyster bar before joining forces here. Farmer Patrick Hudson turned a hobby of oyster gardening on St. Jerome's Creek into Maryland's premier oyster farm, now selling over one million oysters a year to retailers and restaurants nationwide.

The Food and Philosophy

Chef Mills champions sustainability and seasonality throughout the menu, incorporating Maryland's invasive species alongside locally sourced ingredients and oysters farmed just down the road. The approach earned him the 2025 Chef of the Year title from the Restaurant Association of Maryland — recognition that reflects a kitchen philosophy rather than a single dish. The restaurant has also been named Best Happy Hour in Baltimore by Baltimore Magazine (2024) and earned four-and-a-half out of five stars from the Baltimore Sun since opening.

The wine program carries its own weight: True Chesapeake holds a Wine Spectator Award of Excellence for 2025, a mark of the care put into pairing the American seafood-forward menu with a thoughtfully curated list.

The Setting and Spirit

The restaurant sits inside Whitehall Mill at 3300 Clipper Mill Road — an industrial-era building that gives the space a grounded, unpretentious character. Farmer Patrick Hudson moves between the farm and the restaurant regularly; the team notes he might even buy you a drink. Sunday brunch, weeknight dinners, private events, and an outdoor setting round out a place that feels genuinely connected to the community it feeds.
