A Quarter-Century of Urban Western Cuisine

The Lonesome Dove Western Bistro opened its Downtown Austin doors in 2015—fifteen years after Chef Tim Love first put his stamp on the Fort Worth Stockyards and earned a Zagat rating of 28, the highest in Texas at the time. The Austin location carries that same DNA: fresh local ingredients, the bold flavors of the American West, and a contemporary refinement that has made Love one of the most recognized names in Southwestern American cuisine. Wine Spectator recognized the restaurant with its Best of Award of Excellence, a distinction that speaks to the depth and curation of the wine program.

The Chef Behind the Kitchen

Chef Tim Love is, by any measure, a culinary pioneer. Over more than 25 years he built a restaurant group from a single concept into a nationwide presence, earned a James Beard Foundation Outstanding Contribution nod, topped D Magazine's Best Chef DFW list, and landed among Best Chefs America's Top 100. He was the first Fort Worth chef to cook at the James Beard House, the first to appear on Good Morning America, and he went on to defeat Iron Chef Masaharu Morimoto on Iron Chef America. He co-founded the Austin Food & Wine Festival and has served as the official chef of Austin City Limits for years. All of that experience and personality flows directly into the Austin bistro.

What's on the Plate

The menu is where Southwestern American cuisine meets genuine ambition. Starters lean into the unexpected: Rabbit-Rattlesnake Sausage with Manchego Rosti and Crème Fraîche, Wild Boar Ribs with Lonesome Dove BBQ Sauce, Blue Corn-Lobster Hushpuppies with Smoked Tomato Butter, and TX Wagyu Carpaccio with Hatch Chili Lime Butter and Spiced Pecans. The Wild Game Fettine section—cuts spit-roasted over open mesquite fire—offers combinations like Black Buck with Pork Belly and Blueberries, or Duck with Rabbit-Rattlesnake Sausage and Black Mission Figs.

Main courses range from an Elk Loin with Hen of the Woods and Candied Blueberries to Chili Rubbed Lamb Chops with Raspberry Chipotle Demi-Glace, Blackened Gulf Redfish, and a Montana Bison Ribeye alongside Fried Smoked Gouda Gnocchi. The hand-cut steak program covers Beef Tenderloin, Bison Ribeye, 30-Day Dry Aged Wagyu Strip, and a 45-Day Dry Aged Tomahawk for two—all served with Gorgonzola Black Garlic Butter.

The Room and the Vibe

Lonesome Dove encourages guests to "dress to impress," while cheerfully acknowledging that denim, cowboy hats, and a touch of rustic charm are very much part of the experience. It is an upscale setting that wears its Western spirit without apology. Valet parking is available at the front door, and the bar turns out a serious cocktail list—including the signature "ALL IN" shot and the Cornfashioned, built on Lonesome Dove's own single-malt whiskey finished in a New York barrel by Stranahan's. Private dining for parties of twelve or more can be arranged through the restaurant's dedicated coordinator.
