The story

Crafted with passion, served with love

Since 2013, Bufalina has been a fixture on East Cesar Chavez Street, earning a place among the nation's most respected Neapolitan pizza destinations through straightforward, seasonal cooking rather than spectacle. Gambero Rosso recognized it with a slice award in 2023, and the praise has only grown from there — Infatuation named it one of the Best Pizza Places in America, while Austin Monthly awarded it Best Pizza in Austin.

The Food

The kitchen's philosophy is simple and deliberate: house-made cheeses, bread, and pasta, sourced locally as much as possible, built around the rhythms of the season. The Neapolitan pizza lineup runs from a bare-bones marinara (tomato, garlic, oregano) to more inventive combinations like the potato pie with crème fraîche, fontina, guanciale, and cured egg, or the al fiore with stracciatella, chili oil, and pecorino. The margherita and the redcrumb — with breadcrumb, red onion, parm, and chile flake — are the kind of pies that make people regulars.

Beyond pizza, the pasta section holds its own: cavatelli al pomodoro with heirloom tomato and ricotta salata, orecchiette with sausage and pickled sweet peppers, and a pappardelle with Neapolitan ragù that fits the restaurant's Italian roots without pretension. Starters like the stracciatella with tomato jam and balsamic, or house sourdough with cultured butter, keep things grounded.

The Wine

The beverage program is genuinely exceptional. With over 500 wines from around the globe, the list centers on small producers committed to organic, biodynamic, and low-intervention farming — and deliberately champions women, LGBTQ+, and underrepresented voices in the wine world. That commitment earned Bufalina a James Beard Award semifinalist nod for Best Wine and Other Beverages Program in 2024, alongside back-to-back local recognition from CultureMap Austin in 2020 and 2023.

The People and the Room

Chef Eli Rodriguez was named Rising Star Chef of the Year by CultureMap Austin in 2024. The restaurant runs primarily as a walk-in spot — parties of one to four are welcomed on a first-come, first-served basis — which gives the place an easy, neighborhood energy that reservations-only dining rarely achieves. Outdoor seating adds to that casual warmth. A second location, Bufalina Due on Burnet Road, has expanded the reach without diluting what makes the original work.
