Where Aspen Comes for Fine Dining

PARC Aspen was brought to life by proprietors Maryanne and Harley Sefton — two people who came to hospitality not from industry backgrounds, but from a genuine passion to preserve the local identity of Aspen's dining scene. Their goal was a restaurant that reflects the true essence of the town: sophisticated yet approachable, rooted in place, open to the world.

The Kitchen: French Discipline Meets Peruvian Heritage

At the stove, Executive Chef Stefano Schiaffino brings together French technique, his Peruvian heritage, and a broad global perspective. The result is an American fine dining menu that draws on Colorado's seasonal bounty without being confined by it. Signature dishes speak to that range: an 11-Year Bourbon Smoked Elk Loin, Mushrooms & Polenta, and a Foie Gras Chaud Froid sit alongside Cast Iron–Seared Steaks and Organic Salmon — each plate crafted with precision and a deep respect for the ingredient itself. Sourcing leans on Colorado farms and purveyors whenever possible, and the menu shifts with the seasons.

The Wine Program

Complementing the kitchen is one of the most distinguished wine programs in Aspen. Wine & Beverage Director John McKenna and Associate Director Alexandra Bisson oversee a list of more than 1,300 curated labels — Champagne, Bordeaux, Burgundy, Italy, Spain, and leading American regions among them. The program has earned Wine Spectator's Best of Award of Excellence three years running, a recognition that reflects both the depth of the cellar and the care with which each bottle is matched to the menu.

The Space

PARC operates across two distinct levels: a bar area with an approachably priced menu, and a contemporary fine dining room where the full kitchen experience unfolds. A private dining room, The 620 Room, seats up to twelve guests year-round. In summer, a sundrenched industrial garden patio opens for outdoor dining — the same patio that hosts the restaurant's annual Fifth Pours party each Food & Wine Weekend, with pours from producers like Louis Roederer and Domaine Ott and bites passed by Chef Schiaffino's team.

For locals and visitors alike, PARC Aspen is a place where the Peruvian-inflected American menu, the wine list, and the genuine hospitality arrive together — without pretension, and without shortcuts.
