Where Aspen's Silver History Meets the Table

The name is deliberate. Element 47 is silver on the periodic table, and silver is what first put Aspen on the map. The restaurant inside The Little Nell carries that legacy forward with a dining room that feels warm, polished, and quietly assured — sophisticated without being stiff, and welcoming in the way that only genuine hospitality can be.

Executive chef Matt Zubrod leads a kitchen built around Colorado Contemporary cuisine, with an à la carte menu that shifts not just by season but sometimes by the week, responding to the freshest produce available. The kitchen proudly serves Wagyu beef locally raised at Cross Creek Farms, house-made pastas, all-natural nitrate-free pork, cage-free eggs, and dairy and produce sourced from Colorado partners. What lands on the plate is guided by what's best right now — not by a fixed template.

The Wine Program Is a Destination in Itself

Few restaurants in the American West can match what Element 47 has built around wine. Wine Spectator has recognized it with a Grand Award continuously since 1997 — a distinction the restaurant celebrated with a special dinner on its 20th anniversary. The James Beard Foundation has nominated the program for Most Outstanding Wine Program multiple times, and Wine Enthusiast inducted it into its Hall of Fame. More recently, Star Wine List named Element 47 a 2026 Silver Star winner, honoring it for Best Long Wine List (more than 600 references), Best Austrian Wine List, Best Italian Wine List, and Best Sparkling Wine List. The World of Fine Wine has called it one of the best hotel wine lists in the world.

For those who want to go deeper, the restaurant offers private wine tastings hosted by a sommelier, and private wine dinners with customized menus and hand-selected pairings developed in consultation with the Wine Director and Executive Chef.

Forbes Four-Star, Michelin-Recognized, and Genuinely Relaxed

Forbes Travel Guide rates Element 47 at Four Stars, noting a team — from the hostess to the sommelier to the back waiter — that ensures every detail of a meal is attended to. The Michelin Guide has recognized it as a recommended restaurant in Colorado. Behind all of this recognition is a room described as sophisticated and sleek, with hues of silver, gray, dark brown, black, and navy, punctuated by details like deep red etched glass water tumblers.

And yet the atmosphere is refreshingly unpretentious. There is no dress code — "Aspen casual" is the standard. The restaurant accommodates food allergies, intolerances, and dietary restrictions. Whether you stop in at the bar after a ski run, settle into The Living Room beside the two-sided fireplace with a glass of wine, or sit down for a full Colorado Contemporary dinner, the welcome is the same.

Element 47 serves breakfast and lunch daily, with dinner offered Wednesday through Sunday.

The à la carte menu changes seasonally, so a duck dish you enjoyed in December may not be the same in June — or there may not be a duck entrée at all. Executive chef Matt Zubrod may even change ingredients based on the freshest produce available that week — or that morning.The interior design at Element 47 is sophisticated and sleek, contemporary and comfortable. The room’s main hues are silver, gray, dark brown, black and navy. But you’ll also find occasional pops of bright color, such as the deep red glass water tumblers with an etched design.From the hostess to the sommelier, and from your main server to the back waiter, staff is on hand to ensure your dining experience at The Little Nell’s signature restaurant is superb.
