Celebrating 20 years on East Main Street, Larks Home Kitchen Cuisine occupies a warmly lit dining room inside the historic Ashland Springs Hotel — a setting that feels both grounded and quietly special. The restaurant's premise is straightforward and sincere: honor Oregon's land, its seasons, and the artisans who tend both. That commitment shows up in every corner of the menu, which draws from local farms, ranches, orchards, creameries, and vineyards across the region.

Executive Chef Franco Console

The kitchen is guided by Executive Chef Franco Console, a Southern Oregon native raised in a Southern Italian household where food and family were inseparable. Console trained at Western Culinary Institute (Le Cordon Bleu) in Portland and has spent nearly two decades shaping the culinary scene in this part of the state, including competing in Iron Chef Oregon. At Larks, he channels that background into Pacific Northwestern cuisine that is at once comforting and refined — bold seasonal flavors rather than studied technique for its own sake.

What's on the Plate

The menu shifts with the seasons, but the kitchen's signatures speak clearly to the region: Southern fried chicken, prime grade hanger steak, seafood from the Oregon Coast, foraged mushrooms, and vibrant vegetarian entrées. Regional touchstones appear throughout — Rogue Creamery's celebrated blue cheese, Oregon lamb, wild berries. Desserts are made in-house by a dedicated pastry team and frequently paired with house-made ice cream.

The wine program has earned the Wine Spectator Award of Excellence four times, recognized for a selection that is sustainable, value-driven, and attentive to Rogue Valley winemakers. Sommelier Molly Shaughnessy works closely with Console on pairings, including curated wine dinner events held in the hotel's English Garden. The bar rounds things out with local spirits and Oregon craft beers.

Guests can choose between the warmly lit main dining room, the historic 1920s bar, or seasonal al fresco seating on the sidewalk in the heart of downtown Ashland. For theatergoers, a dedicated pre-theatre three-course menu offers an unhurried Pacific Northwestern dinner before curtain at the Oregon Shakespeare Festival, just steps away.
