Since 1983, Alchemy Restaurant and Bar has occupied the first floor of the Winchester Inn, a historic hotel on South Second Street in Ashland, Oregon. Four decades of continuous operation have made it a reliable anchor in a town known for its Oregon Shakespeare Festival crowds and discerning visitors — a place where the kitchen and the bar are taken equally seriously.

The Philosophy Behind the Name

The restaurant's name is more than branding. The team frames their entire approach around the alchemist's pursuit of the Magnum Opus — the idea that base ingredients, through skill and intention, can be transmuted into something greater. Spices, herbs, sugars, and oils become a "single, cohesive vision." The same logic extends to the bar: alchemists, after all, created the first cocktail bitters and tinctures. It's a framework that gives the kitchen and the bar program equal standing, and it shows on the menu.

The dinner menu is rooted in American cuisine with precise, ingredient-forward cooking. Starters include a Roasted Mushroom Mousse served with sherry mushroom mousse, sautéed wild mushrooms, and grilled sourdough, and a Steak Tartare with bagna càuda and potato chips. Mains range from a Prime New York Strip with potato au gratin and black garlic jus to Scallops with yuzu dashi, burdock-wrapped shiso, trout roe, and yam purée — a dish that pushes the American cuisine framework into more adventurous territory. A rotating "Alchemist's Solution" offers the day's vegetarian creation for those who want the kitchen to surprise them.

Desserts hold their own: a Brown Butter Semifreddo with buttermilk caramel, a Pear Frangipane Tart with amaretto-poached pears and vanilla mascarpone whip, and a Mocha Chocolate Mousse round out the meal alongside an extensive digestif list spanning cognac, Armagnac, Calvados, and single malts.
