The story
In 2014, Sean Piper purchased a small, condemned historic building on Haywood Road in West Asheville and spent years restoring it by hand—carefully enough to earn a Griffin Award for Adaptive Reuse from the Preservation Society of Asheville and Buncombe County. When Jargon finally opened its doors on May 15th, 2017, it brought with it a clear point of view: modern American cuisine inspired by the world around us, unconstrained by borders, and intended to bring people together through food as a shared language.
Sean Piper's path to restaurateur was anything but direct. A New England native who spent seventeen years working as a grip and dolly grip on major film and television productions—including The Hunger Games, Indiana Jones and the Kingdom of the Crystal Skull, and Three Billboards Outside Ebbing, Missouri—he developed the concept for Jargon in the margins of that career. His wife Shelly, who holds a master's degree in arts administration and spent years at the Getty Research Institute in Los Angeles, shaped much of the restaurant's interior. Her mosaic tile work is the first thing guests see when they walk through the door.
In the kitchen, Executive Chef Aleksander Kubicki brings a focused, ingredient-driven approach to the ever-changing menu. He grew up in Orange County, California, first learning to cook alongside his grandmother making traditional Polish dishes. After culinary school in Seattle and years of kitchen work that culminated in contributing to a Michelin-starred team in Brooklyn, he joined Jargon in 2022. His cooking reflects a deep respect for seasonal ingredients and a conviction that food should spark conversation and create lasting memories.
The menu rotates with the seasons, drawing on local growers to highlight what's fresh and distinctive. The modern American cuisine here is genuinely wide in its references—shaped by global influences while remaining grounded in what's available and excellent right now. That commitment to the beverage program is equally serious: Jargon holds a Wine Spectator Award of Excellence, recognition that speaks to the depth and curation of its wine list. Creative cocktails round out a drinks program designed to complement rather than compete with the food.
Seating options reflect the building's character and the owners' care. The dining room features table and booth seating, original art, and vintage touches throughout. Guests who want a closer look at the kitchen can reserve seats at the Chef's Counter—three bar seats with a direct view of the line. Outside, a covered, heated courtyard with a retractable roof makes year-round outdoor dining a genuine pleasure. For larger gatherings, the Argot Room functions as a private event venue managed by Event Coordinator Andrea Kentner.
Live music fills the courtyard on Friday and Saturday evenings, and an early-week discount makes Sunday through Tuesday an especially good time to explore what Jargon's modern American cuisine has to offer.
