The story

A French Chef's Vision in the Heart of London

Hibiscus was the project of French chef Claude Bosi, and its story begins not in London but in Ludlow, Shropshire, where Bosi opened the original restaurant in 2000. That intimate 36-seat room became a serious address for French haute cuisine in Britain remarkably fast — Bosi earned his first Michelin star in 2001 and a second in the 2004 Guide. The kitchen's approach drew on molecular gastronomy: Bosi famously developed a process for making Savoy cabbage purée from freeze-dried cabbage, a detail that captures his precise, science-informed sensibility.

From Shropshire to Mayfair

In 2006, Bosi and his wife Claire decided to move closer to London. The Ludlow property was sold in 2007, and Hibiscus reopened in October of that year at 29 Maddox Street in Mayfair. The new address brought the restaurant into direct conversation with London's most demanding dining scene — and the recognition followed. In 2010 and again in 2011, Hibiscus appeared in The World's 50 Best Restaurants, placing it among a very short list of British addresses to achieve that distinction in consecutive years. The Good Food Guide ranked it eighth best restaurant in the UK in its 2013 edition, and the restaurant accumulated five AA rosettes across its lifetime.

What the Kitchen Produced

The menus from Hibiscus's final years show the range of Bosi's French fine dining sensibility: starters of Devonshire Crab with elderflower and new season green almond, or Marinated Cornish Mackerel with kumquat and black sesame; mains built around South Coast Turbot, Frog's Leg with morel and vin jaune, and Somerset Goat Kid with samphire and razor clams. Desserts carried the same precision — a Wild Strawberry Vacherin finished with 100-year-old balsamic vinegar, or Chocolate with Indonesian basil. The dinner format offered a four-course menu, a surprise menu, and a Hibiscus Classics menu, each with an optional wine flight.

A Closed Chapter

Hibiscus closed in 2016. What it left behind is a clear record: a chef-led restaurant that carried French haute cuisine from a small market town to one of the world's most competitive dining cities, and earned its place among the best in the world along the way.
