The Mind Behind the Duck

Entirely self-taught, Heston Blumenthal built The Fat Duck on High Street in Bray, Berkshire into one of the most celebrated restaurants on the planet. Drawing on science, history, and what he describes as his own unstoppable curiosity, he revolutionised British gastronomy and created a cuisine widely acknowledged as highly innovative and original. Those achievements earned the restaurant three Michelin stars, and for years it sat at the very top of the World's 50 Best Restaurants list – holding the No. 1 position in 2005 and ranking in the top five for much of the following decade.

Blumenthal's neurodivergence – he was diagnosed with ADHD in 2017 and later identified as bipolar in 2023 – is something he now openly credits as a driving force behind his culinary determination and inventiveness. In recent years, alongside his work in the kitchen, he has focused on a second mission: increasing awareness about mental health and neurodiversity within the hospitality industry and beyond.

Three Ways to Experience It

The Fat Duck currently offers three distinct menus, each framing the experience differently. The Journey is described as the ultimate exploration of Heston's wonderland of culinary fun and finesse – the full, unabridged expression of the restaurant's modernist British cooking. The Mindful Experience takes a scaled-back approach to each dish, designed to be savoured slowly and deliberately, course by course. And then there is Topsy-Turvy – The Fat Duck, but backwards.

Each format reflects the same underlying philosophy: that every meal is an opportunity to nourish the mind as well as the body, to appeal to all the senses and trigger memories and emotions.

A Sommelier Team to Match

The drinks programme is handled by what the restaurant calls its "superlative, inventive Sommelier Team," whose list spans Champagne by the glass – including a 2002 Piper-Heidsieck Rare – through wines by the bottle, sakes, fortified wines, and cocktails such as a Barrel Aged Negroni infused with spices. A non-alcoholic pairing path runs alongside, ensuring the full experience is accessible to all guests.

Setting and Recognition

The restaurant sits in the village of Bray, a short drive from Maidenhead. Alongside its long run in the World's 50 Best – a list it topped outright and on which it appeared consistently for over a decade – Blumenthal has received honorary degrees from the universities of Reading, Bristol, and London, an honorary fellowship of the Royal Society of Chemistry, and an OBE. The Fat Duck remains a benchmark for modernist British cuisine, a place where, in Blumenthal's own words, the goal is to see what's possible when we set free our imagination.
