The story

Crafted with passion, served with love

A Career Built on Italian Conviction

Theo Randall's path to one of London's most respected Italian restaurants was anything but direct. His passion for food grew from family holidays across Europe, and his career began not in a kitchen but on the floor — as a waiter at Chez Max, where owner Max Magarian quickly spotted his potential and moved him to the kitchen. Four years of classical French training followed before, in 1989, Randall joined the River Café. There, under the mentorship of Ruth Rogers and Rose Gray MBE, he found his true culinary home. A year cooking alongside Alice Waters at Chez Panisse in Berkeley deepened his appreciation for exceptional produce, and when he returned to the River Café as head chef, the restaurant earned its first Michelin star in 1997 under his watch.

In November 2006, he left to open Theo Randall at the InterContinental London Park Lane — a restaurant that carries his name and his convictions in equal measure.

The Food: Market-Led, Region-Rooted Italian Cooking

The menu changes daily, shaped by whatever the market offers that morning and by Randall's regular trips to Italy. This is not a static repertoire but a living one, grounded in the simplicity and generosity that define Italian cooking at its best. Gambero Rosso, Italy's foremost food authority, recognised this commitment with a 2 Forks award — a mark of quality that carries particular weight given the guide's Italian origins.

Each month, a Regional Tasting Menu celebrates a specific Italian region through its signature dishes and time-honoured recipes, available at £85 per person including a three-course wine pairing. The wine list itself — personally overseen by Randall — features 90% Italian varietals, a deliberate choice that reinforces the kitchen's regional focus.

The dessert menu gives a clear sense of the kitchen's register: an Amalfi lemon tart with crème fraîche, a vanilla panna cotta with rhubarb, orange and Moscato, a ricotta cheesecake with pears and sultanas marinated in Marsala and vanilla. Restraint and precision rather than spectacle.

Beyond the Plate

The Negronificio — the restaurant's bespoke Negroni bar — allows guests to build their own version of the Italian classic from an extensive list of Italian gins, vermouths and bitters, guided by the bar team. Friday evenings bring live music to the dining room, and Theo himself is present at most services, a rarity at this level and a genuine signal of his commitment to the restaurant.

For those who want to take something of the experience home, Randall has published five recipe books exploring Italian food — from pasta to the Italian pantry to his latest, Verdura — and runs masterclasses at the restaurant.

Situated within the InterContinental London Park Lane at One Hamilton Place, Theo Randall Cucina Italiana occupies a prestigious address without trading on it. The cooking does the work.
