The restaurant has earned recognition from the MICHELIN Guide as one of the best restaurants in Dubai, and its wine program carries the Wine Spectator Best of Award of Excellence — a distinction that speaks to the seriousness with which every element of the meal is considered.

Chef Nobu Matsuhisa's Vision

The kitchen follows the culinary philosophy of Chef Nobu Matsuhisa, whose Japanese cuisine with Peruvian influence has defined a global style of cooking that remains entirely his own. At the Dubai address, that vision translates into signature dishes including black cod miso, shiitake mushroom salad, and sushi — each executed with what the restaurant describes as "precise craftsmanship and bold, contemporary flavour." The Asian fusion approach feels neither borrowed nor diluted here; it is the point.

The Bar Program

The bar operates with the same level of intention as the kitchen. The current cocktail menu, titled The Journey of Sound, was developed by the bar team through an immersion in the rhythms of traditional Japanese instruments. Each drink maps a sonic quality onto flavour: sharp notes become brightness and acidity, low frequencies translate into depth and umami, tempo shapes texture. The result is a list of signatures — among them a Croissant Bellini with Ketel One and blue cheese, a Kumo Sidecar with Rémy Martin and truffle, and a Yuzu Pie built on Haku sake and coconut — that reward attention rather than simply refreshing the palate.

From Lunch to Late Evening

The space moves with the hours. Weekend lunches bring a more relaxed pace, while evenings shift toward something more vibrant — indoor seating, a terrace with views over the Palm, and a bar that runs late into the night. A Summer Omakase menu offers a specially curated seasonal format for those who prefer to surrender the choices entirely. Private events are also accommodated, making Nobu Dubai a versatile address across occasions.
