The story
On the eighth floor of Fomich Residence, above the Carpathian village of Polyanytsya near Yasinya, Batoni announces itself with a single word of Georgian welcome: Gamarjoba. The restaurant describes itself as an "embassy of Georgian cuisine," and the setting makes that declaration feel earned — floor-to-ceiling views of the mountains shift with every season, framing a dining room that seats up to 100 guests in open, unhurried comfort.
The kitchen at Batoni is built on Georgian culinary tradition, with the chef sourcing only the freshest ingredients to prepare dishes that, in the restaurant's own words, "transport you to the heart of Georgia." Every plate is made with deliberate care for technique and authenticity — no shortcuts, no fusion shortcuts. The seasonal approach means what arrives at the table reflects both the Georgian pantry and the rhythms of the Carpathian landscape outside.
Breakfast runs daily from 8:00 to 11:00, making Batoni a full-day destination for guests of the residence and visitors alike — from a morning meal in the mountains through to a late dinner at 23:00.
The wine program is central to the Batoni experience. The cellar brings together the best of Georgian winemaking alongside international selections, and the depth of that curation has been recognized: Batoni holds a Wine Spectator Award of Excellence for 2025, a mark of distinction earned by very few restaurants in Ukraine. For guests interested in wine pairing, the list is built to reward curiosity at every level of familiarity with Georgian varietals.
Service at Batoni is framed around the Georgian tradition of hospitality — attentive, warm, and personal. The spacious hall accommodates private parties and special events, and the broader Fomich Residence complex includes a heated panoramic pool bar and a full spa, making it easy to build an entire evening — or an entire stay — around the table.
