The story
Since 1992, Sans Restaurant has occupied a two-storey villa set within a garden in Levent, one of Istanbul's most established business and residential neighbourhoods. From the beginning, the kitchen has built its reputation on a single consistent promise: seasonal Mediterranean and Turkish cuisine presented with contemporary technique and an uncompromising commitment to guest satisfaction. That longevity — and the Wine Spectator Award of Excellence the restaurant earned — speak to a standard that has held across decades.
The menu reads like a map of Turkey's finest producing regions. Artichokes arrive from Urla, sea bass is line-caught from the Aegean, lamb comes from Trakya, asparagus from Kula, morel mushrooms from Göcek, and beef ribs from Çanakkale. That geographic specificity is not incidental — it reflects a kitchen that sources deliberately and lets provenance shape the plate.
Starters lean into the Turkish tradition of cold olive-oil dishes: stuffed courgette flowers with courgette carpaccio, a fava purée with Urla artichoke, and a yoghurt-dressed purslane salad sit alongside a buffalo-milk burrata with aged balsamic. The fish section features Aegean sea bass with green curry and mango, Mediterranean monkfish, and seared Ahi tuna with citrus soy — a confident Mediterranean reach that extends east without losing its footing. On the meat side, slow-cooked Trakya lamb neck, Çanakkale beef short rib braised low and long, and a charcoal-grilled beef tenderloin with smoked pepper sauce anchor a list that rewards patience and good wine.
Executive chef Melda Farimaz, mentioned with warmth by multiple guests, oversees a kitchen that balances classical Turkish flavour with a modern, ingredient-led sensibility.
Diners describe the atmosphere as comforting and unhurried — a place almost exclusively frequented by Istanbul locals and long-term expats who value discretion over spectacle. The garden, green and shaded, transforms the restaurant in spring and summer into one of the city's more quietly striking outdoor dining settings.
For private occasions, Sans is well equipped. The garden accommodates up to 120 seated guests or 250 for a standing cocktail reception. The lower floor seats 75, while the upper floor — with its own private bar — handles up to 50 for a seated dinner or 150 for a cocktail event. A lady sommelier on the floor and an owner, Niso, praised by guests for genuine hospitality, round out a service team that consistently draws favourable notice.
