The story
Since opening its doors in March 2016, Sühring has redefined what modern German cuisine can be in the heart of Bangkok. The restaurant is the shared vision of twin brothers Thomas and Mathias Sühring, whose culinary story began long before any professional kitchen — it started on their grandparents' farm during school summer holidays. There, they were introduced to the timeless craft of fermentation, pickling, smoking, drying and curing: old-school techniques deeply rooted in German tradition that continue to shape every plate served today.
Sühring's philosophy is beautifully straightforward: take the essence of traditional German dishes and elevate them to the level of haute cuisine, infusing them with contemporary Central European influences gathered across the twins' travels through the Netherlands, Italy and Thailand. The result is a seasonal tasting menu that is at once sophisticated and playful — dishes like spaetzle egg noodles crowned with Périgord truffle evoke warm culinary nostalgia, while lobster with vanilla, persimmon and hazelnut and Kagoshima A5 wagyu with kintoki carrot and oxtail reveal the refined ambition at the heart of the kitchen. Scallop with pumpkin and kelp further demonstrates how this modern German cuisine bridges continents with quiet confidence.
The setting is as considered as the food. Housed in a renovated 1970s villa, Sühring offers four distinct dining ambiances. The convivial Dining Room is the warm, homely main space; the Kitchen places guests at the beating heart of the action with a direct view of the twin chefs at work; the Glass House bathes diners in natural light and lush garden views for an intimate, romantic atmosphere; and the Living Room on the upper floor accommodates private gatherings of up to eight guests. Together they create a blissful, calming retreat from Bangkok's energetic pace.
The world has taken notice. Sühring holds two Michelin stars — awarded continuously since 2018 — and ranks #22 on the World's 50 Best Restaurants 2025 list, having climbed steadily from #45 in 2019. The restaurant is also a proud member of Relais & Châteaux. To complete the experience, guests can explore wine pairings drawn from the Rheingau in Germany and Kremstal in Austria, or opt for a thoughtfully curated juice pairing — a reflection of the same philosophy that guides the twins' modern German cuisine from first bite to last sip.
