The menu is rooted in French cuisine but avoids the stiffness that label can sometimes imply. Scarlett's approach is produce-driven: smaller tapas-style bites sit alongside charcuterie and cheese boards, dry-aged steaks, and a dedicated seafood grill section that has become a signature of the kitchen. The seafood offering is particularly distinctive — premium fish and shellfish are displayed on ice each week, allowing guests to select their catch before it goes over Binchotan charcoal. This rare, high-carbon charcoal burns at extreme heat, locking in moisture and creating a crisp exterior while preserving delicate flavour. The dry-aging technique, borrowed from the meat kitchen, is applied to fish here to deepen taste and achieve a noticeably buttery texture.
Specific options from the seafood grill menu include Tasmanian salmon, tiger prawns, Mediterranean sea bream and sea bass, snow fish, Maine lobster, turbot for two, and octopus — each served with steamed potatoes, romesco sauce, chimichurri, and fresh lemon. Tuesday nights bring a separate ritual: freshly shucked French Fine de Claire No.4 oysters, available by the piece.
The sprawling terrace is the natural home for Scarlett's happy hour, running daily from opening until 7 PM, with selected wine and beer from THB 100++.
