What Bologna Actually Eats

The menu draws on the full grammar of Bolognese cuisine. A proper meal here might move through an antipasto of mortadella and prosciutto, a primo of fresh pasta with ragù, and a secondo of meat or vegetables — the same structure you'd find sitting down in Bologna itself. The kitchen leans on the region's defining preparations: tagliatelle al ragù (the true ancestor of what the world calls "bolognese"), tortellini, lasagna layered with spinach pasta, béchamel, and Parmigiano Reggiano, and gramigna alla salsiccia with its fennel-seasoned sausage sauce.
